Layered berry medley with curd and meringue

Introduction:
Eton Mess is a classic British summer dessert made with just whipped cream, meringue cookies, and summer berries. With LaFroza’s frozen berries, this delightfully simple treat can be made all year round. We’ve given it a local twist by adding a touch of curd cream to suit Estonian tastes.

Ingredients:

  • 300 g vanilla curd cream

  • 400 ml whipping cream

  • 150 g meringues

  • 100 g lemon curd

  • 1 lemon

  • 3 tbsp sugar

  • ½ box LaFroza sea buckthorn berries

  • ½ box LaFroza honeysuckle berries

  • Mint leaves for garnish

Instructions:

  1. Cream preparation:
    Whip the cream with 2 tbsp sugar until stiff peaks form and fold in the curd cream.

  2. Meringue prep:
    If needed, break the meringue cookies into smaller pieces.

  3. Lemon addition:
    Grate the zest of half a lemon into the cream. From the other half, you can cut thin strips for decorating the dessert.

  4. Berry addition:
    Mash some of the honeysuckle berries with 1 tbsp sugar into a raw jam.

  5. Assembling the dessert:
    Layer meringue pieces, lemon curd, the mashed honeysuckle berries, the whipped cream–curd mixture, and whole frozen berries into a large bowl or dessert glasses.

  6. Garnishing:
    If desired, decorate with lemon zest strips and mint leaves.

Additional:
By replacing the meringue cookies with Pavlova nests, you can use the same ingredients to create delicate Pavlova desserts.
